PREHEAT THE OVEN TO 190°C.

LINE THE SHEET PAN WITH A SILICONE MAT.

HAVE YOUR FORTUNES STRIPS READY TO GO.

IN A BOWL, WHIP THE EGG WHITES AND SUGAR UNTIL FROTHY.
2. 
WHIP IN THE MELTED BUTTER, VANILLA, ALMOND EXTRACT AND MILK UNTIL INCORPORATED.

ADD THE FLOUR AND MIX UNTIL IT *JUST* DISAPPEARS.

WITH A TABLESPOON MEASURE, SPOON THE BATTER ONTO THE PARCHEMENT PAPER.

SPREAD IT OUT INTO AN EVEN 7 CENTIMETER CIRCLE.

DO NO MORE THAN 2 OR 3 AT A TIME AS YOU WILL NOT BE ABLE TO FOLD MORE AT ONCE.

BAKE THE COOKIES FOR ~7 MINUTES, UNTIL THE EDGES BROWN SLIGHTLY.

REMOVE THE BISCUIT FROM THE OVEN.
2.  
FLIP THE CIRCLE OVER.
3.  
FOLD YOUR FORTUNE COOKIE INTO A SEMICIRCLE (IN HALF).
4.  
SLIP YOUR NOTE INTO THE COOKIE *QUICKLY*.
1. 
PLACE THE FLAT SIDE OF YOUR SEMICIRCLE ONTO THE EDGE OF A CUP.
2. 
CRIMP IT INTO A FORTUNE COOKIE SHAPE BY FOLDING ITS EDGES DOWN.
3. 
PLACE THE COOKIE IN A MUFFIN TIN TO LET IT COOL AND HOLD ITS SHAPE.
